Instructions:

Step 1: Prepare the Dough
In a large bowl, add 200 g of HeriMore Kachori Premix. Pour in 1 cup of hot water and 2 tablespoons of hot oil. Mix well to form a soft, non-sticky dough. Add a little more water if needed to get the right consistency. Cover and let it rest for 15–30 minutes.


Step 2: Shape the Kachoris
Once the dough is rested, roll it into a thick log. Drizzle a little hot oil over it to prevent sticking. Cut the log into 5–7 equal pieces. Roll each piece into a smooth ball between your palms. Then use a rolling pin (belan) to flatten each ball to about ¼-inch thickness. (Refer to the video to see ideal thickness.)


Step 3: Fry to Perfection
Heat oil in a kadai on medium flame. Gently slide in the flattened dough discs one by one. Fry until they puff up and turn golden brown, flipping once or twice to ensure even cooking. Remove and drain on paper towels.
