Kadai Style Veg Curry

Ingredients:
- 4 tbsp HeriMore Kadai Masala Curry Mix
- 2 cups boiling water
- 1 tbsp ghee
- 1 tsp cumin seeds (jeera)
- Salt to taste

- A bowl of boiled mixed vegetables (e.g. cauliflower, capsicum, mushroom, peas — feel free to use whatever’s in your fridge!)

Instructions:
Step 1: Prepare the Curry Base
In a bowl, add 4 tablespoons of HeriMore Kadai Masala Curry Mix. Pour in 2 cups of boiling water and stir until fully dissolved. Set this aside.
Step 2: Simmer the Curry
Transfer the dissolved curry mixture to a heavy-bottomed pan. Bring it to a gentle simmer on medium-low heat, stirring occasionally. Let it simmer while you prep the veggies.
Step 3: Temper the Spices
In a separate kadai, heat 1 tablespoon of ghee. Once hot, add 1 teaspoon of cumin seeds (jeera) and let them crackle until aromatic.
Step 4: Add and Sauté the Veggies
Toss in your boiled vegetables (like cauliflower, capsicum, mushrooms, and peas). Add salt to taste and sauté for 2–3 minutes on medium flame to enhance texture and flavour.
Step 5: Combine Curry Base with Veggies
Pour the simmering curry base into the kadai with the vegetables. Stir gently to coat the veggies evenly. Let the curry and vegetables cook together on low heat for 4–5 minutes so the flavours can meld beautifully.
Step 7: Garnish and Serve
Garnish with fresh coriander leaves and serve hot with roti, paratha, naan, or steamed rice.
